Hi food lovers! Welcome once again to the world of food!
Today, I’m excited to share some mouthwatering non-vegetarian recipes that are close to my heart. Although I’m a vegetarian myself, my husband is a die-hard non-veg lover. So, I’ve learned these special dishes from my mother-in-law and from some of our trips — and today, I’m thrilled to share them with you all.
Let’s dive into the rich, spicy, and aromatic world of non-veg delights!
1. Hyderabadi Biryani
One of the most iconic dishes of Indian cuisine, Hyderabadi Biryani is a perfect blend of spicy marinated meat and fragrant basmati rice.
Recipe:
• Start by taking chicken in a cooking pot.
• Chop 3–4 onions and fry them in oil or ghee until golden brown. Once fried, keep them aside.
• Now, to the chicken, add yogurt, lemon juice, the fried onions, green chilies, ginger-garlic paste, and spices: Kashmiri red chili powder, turmeric, coriander powder, cloves, black peppercorns, bay leaves, green and black cardamom, salt, chaat masala, biryani masala, black cumin (kala jeera), and garam masala.
• Add freshly chopped coriander and mint leaves. Mix everything well and marinate for 1 to 1.5 hours.
• In a separate pot, boil water. Add salt, bay leaves, black pepper, oil, and green cardamom. Add basmati rice and cook until 60–70% done. Drain and set aside.
• Now, in another pot, heat ghee and cook the marinated chicken until tender.
• Start layering: a layer of chicken, a layer of rice. Add food coloring on the top layer (optional).
• Seal the pot with dough or a cotton cloth, place a lid and weight on top, and cook on a medium flame for 30–40 minutes.
Ingredients:
• Chicken
• Yogurt
• Onions
• Green chilies
• Ginger-Garlic paste
• Fresh coriander
• Fresh mint
• Oil/Ghee
Spices Used:
• Kashmiri red chili powder
• Turmeric
• Red chili powder
• Coriander powder
• Chaat masala
• Biryani masala
• Garam masala
• Salt
• Whole spices: cloves, black pepper, bay leaves, green cardamom, black cardamom
Tips:
• Cook rice only 60–70% for a fluffy texture.
• Add a little oil while boiling rice to keep the grains separate.


2. Roasted Chicken
This simple and flavorful roasted chicken is one of my husband’s favorites — and I’m sure someone in your home will fall in love with it too!
Recipe:
• Take a whole chicken and make deep cuts so the marinade can seep in.
• Prepare a marinade with yogurt, Kashmiri red chili powder, red chili powder, garam masala, chaat masala, salt, turmeric, and fried onions. Blend into a smooth mixture.
• Apply the marinade generously to the chicken, especially into the cuts.
• For extra flavor, add a sliced garlic clove and a bit of ginger inside the chicken.
• Roast the chicken well. Once done, brush it with some ghee for a glossy, rich finish.

• Kashmiri red chili powder
• Red chili powder
• Garam masala
• Chaat masala
• Salt
• Turmeric
• Fried onion


3. Angara Chicken
This fiery, smoky chicken dish is inspired by a recent trip to a relative’s place, where I first tasted it and immediately asked for the recipe!
Recipe:
• Take chicken in a bowl and make light cuts for better marination.
• Prepare a paste of lemon juice, yogurt, green chilies, ginger, fresh coriander, and mint. Add it to the chicken.
• Add Kashmiri red chili powder, red chili powder, turmeric, coriander powder, salt, chaat masala, and garam masala. Mix well and marinate for 1 to 1½ hours.
• Heat oil in a pot, add the marinated chicken, and cook well, adding water as needed.
• Once cooked, garnish with fresh coriander leaves.
• For the smoky touch: place a hot piece of coal in a small bowl or diya, pour a spoonful of ghee over it, and place it in the pot with the chicken. Cover the pot tightly for 10–15 minutes to infuse the smoky flavor.

• Diya or small bowl for smoke

• Red chili powder

Tips:
• Always make cuts on the chicken to help it absorb flavors better.
• Use ghee with coal for a deep, authentic smoky flavor.
